Buttermilk mashers with St.Bernardus cheese
Serves: 4 persons
Ingredients
1 kg potatoes, a pinch of salt, 75 cl buttermilk, 1 tbsp flour, 150 g farm butter, pepper, salt, nutmeg
Finishing touches: St.Bernardus cheese, fresh grey shrimps (peeled), 1 egg (poached)
Preparation
Peel the potatoes, cut into pieces and cook until done with a pinch of salt. Heat the buttermilk with the flour. Melt the butter into a beurre noisette. Mash the potatoes and add the boiling buttermilk and the beurre noisette (set some aside for garnishing) while stirring until everything is nicely mixed. Season with pepper, salt and nutmeg.
Finishing touches
Serve the mash in a soup plate. Add some St.Bernardus cheese or some freshly peeled grey shrimps. Garnish with a poached egg and some beurre noisette.
Serve with St.Bernardus Prior 8!
